- Salt and freshly ground black pepper
- 2 cloves garlic
- 1 a piece lemon
- A few sprigs of fresh rosemary
- 3 tablespoon olive oil

Preheat the pan and add the olive oil. When the oil is hot enough, add the fish. This is important because if the pan is well preheated, the fish will not stick to it.
Cut the garlic into slices and the lemon into quarters. Add these ingredients to the fish along with the sprigs of rosemary.
Sear the fish on one side for about 10-12 minutes, then carefully turn it over and sear the other side.
