Fresh Vegetable Spring Rolls with Peanut Dipping Sauce
These Fresh Spring Rolls with Peanut Sauce are the perfect light appetizer or meal. The vibrant crisp vegetables wrapped in the transparent spring roll skins present a visual treat, while the tangy peanut sauce adds a flavourful punch. Ingredients
For the Spring Rolls:
- 12 Spring Roll Wrappers
- 2 large carrots, julienned
- 1 large cucumber, julienned
- 1 bell pepper, thinly sliced
- 1 Cup fresh spinach leaves
- 1 volume fresh mint leaves
- 1 volume Fresh cilantro
For the Peanut Sauce:
- 1⁄2 Cup peanut butter
- 1 tablespoon hoisin sauce
- 2 teaspoons soy sauce
- 1 clove garlic, minced
- 2 tbls Fresh Lime Juice
- 1⁄2 Cup water to thin (if necessary)

Directions
In a blender or food processor, add all ingredients and blend until smooth. If the sauce is too thick, gradually add water until desired consistency is reached. Set aside.
Prepare all vegetables and herbs by washing and cutting them accordingly.
Wet your spring roll wrapper with warm water until it's pliable.
Lay the damp wrapper on a flat surface and arrange the herbs, spinach, and vegetables in the middle. Make sure to leave space around the edges for folding.
Lift the edge of the wrapper nearest to you and cover the filling. Fold in the sides then roll it up tightly like a burrito.
Repeat with the remaining ingredients.
Serve the spring rolls whole, or cut them in half with the peanut sauce on the side.
