Flourless Coconut Cake
Recipe for a flourless coconut cake, suitable for people with coeliac disease.
Ingredients
- 4 a piece egg
- 1⁄2 mug crystal sugar
- 1 a piece vanilla sugar
- 1 mug whipped cream
- 21⁄2 mug grated coconut
- 1 kl baking soda
- pinch of salt
- powdered sugar for sprinkling

In a bowl, mix the eggs with the sugars.
We add cream to them, stir and finally add coconut mixed with salt.
We often put it in the fridge for 30 minutes.
Preheat the oven to 180ºC and line a baking tray with parchment paper.
Into the cooled dough, mix in the baking powder and layer it into the mold.
Bake the coconut cake without flour in an oven preheated to 180°C for 35 minutes.
After baking, we sprinkle it with powdered sugar.
