Easy Vegan Tofu and Vegetable Curry
Tofu and Vegetable Curry is a delectable, vegan dish filled with an array of veggies and tofu. This flavorful curry is coated in rich coconut curry sauce that compliments the crunchy vegetables and soft tofu perfectly. Ingredients
- 2 cups of cubed tofu
- 2 cups of mixed vegetables (carrots, peas bell peppers and broccoli)
- 1 can of coconut milk
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 tbls of vegetable oil
- 2 tbls of curry powder
- 1 teaspoon of cumin
- 1 teaspoon of turmeric
- salt and pepper to taste
- Fresh coriander for garnishing
- Rice to serve

Directions
Heat the vegetable oil in a large pan over medium-high heat. Add the chopped onions and minced garlic. Sauté until the onions become translucent.
Add in the curry powder, cumin, and turmeric. Stir well to coat the onions and garlic.
Add the mixed vegetables to the pan. Sauté for a few minutes until they start to soften.
Pour in the coconut milk and stir until everything is well combined. Reduce the heat to low and allow the mixture to simmer for about 10 minutes.
Add the cubed tofu to the pan. Stir gently so that the tofu is coated in the curry sauce. Let it cook for a further 5-7 minutes.
Season with salt and pepper according to your taste.
Serve the tofu and vegetable curry over rice. Garnish with fresh coriander.
