Easy Pasta with Garlic, Lemon, Spinach and Ricotta
A quick and easy vegetarian dish, this Spinach and Ricotta Pasta is rich, creamy, and incredibly satisfying. This recipe features earthy spinach and smooth ricotta cheese simmered together with your favorite pasta for a delightful meal that everyone will enjoy.
Ingredients
- 400 gms of your favorite pasta
- 200 gms of fresh spinach
- 1 Cup of ricotta cheese
- 2 cloves of garlic, minced
- 2 tbls of olive oil
- salt and pepper to taste
- A pinch of nutmeg
- 1 Cup of Parmesan Cheese, grated
- Zest of one lemon
- Fresh basil for garnishing

Directions
Cook your pasta in a large pot of salted boiling water according to the instructions on the package until it's al dente. Drain it and set it aside.
While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté for 1-2 minutes, until it becomes fragrant.
Add the fresh spinach to the pan and cook it until it wilts. This should take about 2-3 minutes.
Reduce the heat to low and stir in the ricotta cheese, lemon zest, and a pinch of nutmeg. Season with salt and pepper to taste.
Stir in the drained pasta and mix it until it's fully coated with the spinach and ricotta mixture.
Remove the pan from the heat and mix in half of the grated Parmesan cheese.
