- 1 kg sliced Jalapeños
- 250 sliced carrots
- 100 g diced white onion
- 2 cloves garlic
- 250 ml vinegar
- 250 ml water
- 50 ml Extra Virgin Olive Oil
- 2 bay leaves
- 1 tablespoon white sugar
- 1 tablespoon salt
- 1 tablespoon Peppercorns
- 1 coriander seed
- 1 tablespoon oregano

1. Step
Clean the jalapeños with plenty of water and leave them to dry, remove the seeds and cut them into slices, as well as the carrot, garlic and onion.
2. Step
Heat the oil in a saucepan, add the vegetables except for the pepper and fry for 10 minutes.
3. Step
Add the chillies and add vinegar, water, pepper, bay leaf, oregano, coriander, salt and sugar, leave to boil for a further 10 minutes and remove from the heat to cool.

Store in jars. Don't close them until the mixture is completely cold. Enjoy!
