Ingredients
- 50 g Slivered almonds
- 60 g pumpkin seeds
- 70 g pine nuts
- 100 g dried blackcurrants
- 65 g capers in vinegar or brine
- 180 g dry freekeh
- 100 g dry French lentils
- 75 g coriander leaves and fine stalks
- 40 g parsley leaves and fine stalks
- 125 g red onions
- 1 pomegranate
- 4 tablespoon Extra Virgin Olive Oil
- 2 lemons
- 2 teaspoon salt

Directions
Mix blackcurrants with capers, allowing the blackcurrants to absorb the vinegar juices and plump up.
Toast nuts/seeds until nicely browned, tossing them often. Ensure they cool completely before adding them to the salad.
Make sure all nuts/seeds/freekeh/lentils have cooled before mixing them into the salad to avoid cooking the herbs.
Mix all salad ingredients just before serving to maintain the crunchiness of the nuts. Adjust the dressing as needed.
The salad is delicious on its own, but you can optionally prepare a dressing by combining Greek yoghurt, ground cumin, and honey.
