Easy Healthy Homemade Granola

Ingredients
- 2 cups old-fashioned oats
- 1 Cup nuts (such as almonds, walnuts or pecans)
- 1⁄2 Cup seeds (such as pumpkin or sunflower)
- 1⁄2 Cup unsweetened shredded coconut
- 1⁄4 Cup honey or maple syrup
- 1⁄4 Cup Coconut oil melted
- 1 teaspoon vanilla extract
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon salt
- 1⁄2 Cup dried fruits

Directions
Preheat oven to 163°C.
In a large mixing bowl, combine the oats, nuts, seeds, shredded coconut, cinnamon, and salt.
In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.
Pour the wet mixture over the dry stir until everything is evenly coated.
Spread evenly onto a lined baking sheet.
Bake for about 20-25 minutes or until the granola turns golden brown, stirring halfway through to ensure even baking.
Remove from the oven and let cool completely on the baking sheet. It will become crispy as it cools.
Once cooled, stir in the dried fruits.
Store in an airtight container at room temperature for up to two weeks.
