Ingredients
For the Crispy Tofu:
- 400 gms of tofu
- 1 Cup of breadcrumbs
- 2 tbls of vegetable oil
- 1⁄2 teaspoon of salt
- 1⁄4 teaspoon of black pepper
For the Mango Salsa:
- 1 ripe mango, peeled and diced
- 1 red bell pepper, diced
- 1⁄2 red onion, finely chopped
- 1 Jalapeno, finely chopped
- 1 volume of fresh cilantro, finely chopped
- Juice of one lime
- salt and pepper to taste
For Serving:
- 8 small flour tortillas
- Sour cream or vegan sour cream substitute (optional)

Drain tofu and pat dry with paper towels. Cut the tofu into small triangles or cubes.
In a mixing bowl, combine breadcrumbs, salt, and pepper. Gently press tofu pieces into the mixture until well coated.
Heat oil in a large skillet over medium-high heat. Add tofu to the skillet and cook until crispy on all sides, about 10-15 minutes.
Meanwhile, assemble the salsa. In a large bowl, combine mango, bell pepper, red onion, jalapeno, cilantro, lime juice, salt, and pepper. Mix well to combine.
