Easy Creamy Sweet Potato Soup

Ingredients
- 2 tbls olive
- 1 chopped onion
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 1⁄2 teaspoon ground cinnamon
- 1⁄4 teaspoon cayenne pepper
- 2 large sweet potatoes, peeled and chopped
- 4 cups vegetable broth
- 1⁄2 Cup heavy cream
- Salt and black pepper, to taste
- Chopped fresh cilantro, for garnish

Add onion and garlic and sauté until softened and fragrant, about 2-3 minutes.
Add cumin, ginger, cinnamon and cayenne pepper and stir to combine.

Turn heat to low and simmer until sweet potatoes are tender, about 15-20 minutes.
Use an immersion blender to puree soup until smooth.
Stir in cream and season with salt and black pepper, to taste.
