Directions

45 min.
1. Step

Firstly, prepare ahead by lining a muffin tray with paper cupcake liners. It's best to use festive colors or patterns to create that vibrant Christmas feel. You'll see, they don't just function as holders, they beautify your Christmas crackles.

2. Step

In a large mixing bowl, combine the rice bubbles, sugar, coconut, and cocoa powder. Stir it gently until the powders coat the cereal well.

3. Step

Melt the copha in a separate saucepan over medium heat. Be patient at this step as overheating can cause it to burn, and we don't want that bitter taste in our Christmas Crackles.

4. Step

Once melted, carefully pour the copha over the dry ingredients. Mix thoroughly ensuring all the dry ingredients are now coated with the copha.

5. Step

Now comes the fun part – it’s time to shape your crackles. Spoon your mixture into the prepared cupcake liners. Make sure you pack them well for a nice solid bite.

6. Step

Sprinkle over the funfetti or sprinkles for that festive sparkle. Press them slightly into the cereal mixture, so they stay attached when the crackles are set.

7. Step

Pop the muffin tray into the refrigerator and allow it to set for at least 30 minutes or until firm.
