Ingredients
- 5 cups of fresh rhubarb, cut into one inch pieces
- 2 cups of fresh strawberries, hulled and halved
- 1 Cup of granulated sugar
- 1 tablespoon of cornstarch
- 1 teaspoon of Vanilla Extract
- 1 Cup of all-purpose flour
- 3⁄4 Cup of rolled oats
- 1⁄2 Cup of brown sugar, packed
- 1⁄2 teaspoon of cinnamon
- 1⁄4 teaspoon of salt
- 1⁄2 Cup of unsalted butter, chilled and cubed

Preheat your oven to 375°F (190°C). Lightly grease a 9-inch baking dish.
Combine the rhubarb, strawberries, granulated sugar, cornstarch, and vanilla in a large bowl. Mix well until the fruit is coated. Pour the mixture into the prepared baking dish.
In a separate bowl, combine the flour, oats, brown sugar, cinnamon, and salt. Add the butter and use your fingers to rub it into the dry ingredients until a crumbly mixture forms.
Evenly sprinkle the crumble mixture over the fruit in the baking dish.
Bake for 45-50 minutes or until the crumble is golden brown and the fruit filling is bubbling.
