Delicious Pizza Bianca

This is my newly spoiled Pizza Bianca, an elegant variation of the classic Italian pizza. Its mild flavor, accentuated by the creaminess of the cheese and the touch of garlic, will surprise you. It takes some time to prepare, but every minute is worth it. Remember, a good crust can make the difference in any pizza, so I recommend investing time in it.

1. Step

In a large bowl combine yeast, sugar and water. Let stand for 5 minutes or until bubbly. Properly activated yeast is essential for the dough to rise well.

2. Step

Add the flour and salt to the previous mixture and knead until you get a smooth and elastic dough. If you have a mixer with a dough hook, it makes your work easier.

3. Step

Heat the oven to 50°C, turn it off and place the dough covered with a damp cloth to rest inside for one hour or until it doubles in size.

4. Step

Heat the oven to the maximum temperature. Ideally it would be in a wood-fired oven, but in a domestic oven it also works, you just have to preheat it well before putting the pizza in.

5. Step

Roll out the dough on a lightly floured surface. With your fingers, form a rim for the crust.

6. Step

Crush the garlic cloves and mix them with olive oil. Spread this mix over the dough, which will result in an incredible flavor in every bite, remember that garlic is the protagonist in this recipe.

Add the mozzarella and ricotta on top of the garlic dough. I prefer to use fresh mozzarella, and it is important to make sure the ricotta is not too wet to prevent the pizza from becoming too runny.

Bake for 15-20 minutes. It depends on how much you like the dough, I prefer when the edges are lightly browned.
