Delicious kiwi jam
Kiwi jam is a real taste sensation, with its unique tropical flavor and bright green color. From my own experience, I can say that this recipe is a refreshing change from the usual jam varieties. The glow of the kiwis in the jar has already brightened up many a breakfast table.

- 1 kg Kiwis
- 500 g Gelling sugar two to one
- juice from one lemon

To make kiwi jam - first peel the kiwis and cut them into small pieces. It is important that you use ripe, but not overripe kiwis, otherwise they could release too much water.
Place the kiwi pieces in a large pot and mash them a little with a fork or potato masher. You can vary here depending on how chunky you like your jam. Personally, I like to leave a few larger pieces for some texture.
Now add the gelling sugar and the juice of one lemon. The lemon not only gives the jam an extra kick of freshness, it also helps with the gelling and preserves the bright green color of the kiwis.
Bring the mixture to the boil and leave to simmer for approx. 4 minutes, stirring constantly. Make sure that nothing burns. The initially frothy porridge will now have thickened a little.
Carefully pour the hot kiwi jam into sterilized jars, close them immediately and turn them upside down for 5 minutes. This creates a vacuum effect and your jam will keep for longer.
