- 250 g zucchini
- 150 g onion
- 4 egg
- 3 spoons Extra Virgin Olive Oil
- aromatic herb mix

Directions
Cut the zucchini into cubes and the onion into thin slices.
In a non-stick frying pan, heat the oil and add the onion and salt lightly. Cook for 5 minutes, stirring frequently.
Add the zucchini and cook for another 5-10 minutes. Turn off and set aside.
Beat the eggs in a bowl, and add salt, pepper and aromatic herbs. Mix well.
Add the vegetables and mix well.
Clean the pan, grease it with a bit of oil, sprinkling it well with a paper towel. Heat the pan and add the egg and vegetable mixture. Cook covered, over medium-low heat, for about 5 minutes.
When the frittata is completely firm on the surface, turn it and cook for another 3 minutes, still on medium-low heat, then serve.
