Ingredients
- 2 medium russet potatoes
- 2 cups fresh spinach
- 1 Cup whole wheat flour, plus more for dusting
- 0.2 teaspoon ground nutmeg
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 2 tbls olive oil
- 2 cloves garlic, minced
- Parmesan cheese for garnish (optional)

Directions
Boil the potatoes until they are soft and easily pierced with a fork. Let them cool slightly, then peel and mash.
Blanche the spinach in a separate pot. Once cool, squeeze to remove excess water and chop finely.
In a large bowl, combine mashed potatoes, chopped spinach, whole wheat flour, nutmeg, salt, and pepper. Knead the dough until it is well mixed and pliable.
Divide the dough into 4 portions. Roll each one on a lightly floured surface into a long rope, then cut into 1-inch pieces.
Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Drain.
In a large pan, heat the olive oil over medium heat. Add the garlic and sauté until fragrant, then add the cooked gnocchi. Sauté for a few more minutes until they are slightly crispy.
Serve the gnocci hot, garnished with Parmesan cheese if desired.
