Directions
To prepare cheese tortellini in tomato sauce, you should first peel and finely chop the garlic. This is the first step to a wonderfully aromatic dish.
Heat the olive oil in a large frying pan over a medium heat. Add the chopped garlic and fry until golden brown. Be careful not to burn it or it will become bitter. Using olive oil instead of butter ensures that the garlic browns nicely without burning.
Now add the tinned tomatoes to the pan. Add a little sugar, salt and pepper. The sugar helps to balance out the acidity of the tomatoes.
Let the sauce simmer on low heat for about 15-20 minutes until it has thickened. I find that this is the key to getting a rich and flavorful tomato sauce.
Meanwhile, cook the tortellini in a large pan of salted water according to the instructions on the packet. Be careful not to overcook it, it should be al dente so that it still has a bite.
Drain the tortellini and toss them directly into the tomato sauce. Stir well so that all the tortellini are well coated with the sauce.
Serve the cheese tortellini hot, garnished with torn fresh basil and grated Parmesan. The fresh basil and Parmesan give the dish that certain something and elevate it from a simple pasta meal to something special.
Enjoy these delicious cheese tortellini in tomato sauce. They are easy to prepare and yet so delicious that they will impress your guests. Enjoy your meal!
