Crispy Three Cheese Baked Gnocchi with Garlic Spinach
This comforting three cheese baked gnocchi with spinach dish is a cheesy delight packed with greens. It blends the succulent flavors of ricotta, mozzarella, and parmesan cheeses with garlicky spinach and pillowy gnocchi under a crispy topping.
Ingredients
- 1 kg of gnocchi
- 2 cups of Spinach, fresh or frozen
- 2 tbls of olive oil
- 3 cloves of garlic, minced
- 11⁄2 cups of ricotta cheese
- 1 Cup of mozzarella cheese, shredded
- 1⁄2 Cup of Parmesan Cheese, grated
- 1 Cup of marinara sauce
- 1 teaspoon of salt
- 1⁄2 teaspoon of black pepper
- A handful of Fresh Basil, chopped for garnish

Directions
Preheat your oven to 220°C (428°F) and lightly grease a large baking dish.
Cook the gnocchi according to package instructions, then drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until aromatic.
If using fresh spinach, add it to the skillet and cook until wilted, stirring frequently. If using frozen, thaw it and squeeze out excess liquid before adding to the skillet.
In a large bowl, mix together the cooked gnocchi, sautéed spinach and garlic, ricotta, mozzarella, parmesan, marinara sauce, salt, and pepper.
Pour the mixture into the prepared dish, spreading it evenly. Sprinkle with a bit more of the cheeses on top.
Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and slightly golden.
Remove from oven and allow the dish to cool for a few minutes before serving. Garnish with fresh basil and serve warm.
