Crispy cookies
This recipe for shortbread cookies is my secret family recipe that I would like to share with you. Definitely, they are the perfect addition to your morning coffee. They are incredibly crumbly, with a delicate flavor of vanilla and powdered sugar.
Ingredients
- 250 g Flours
- 100 g Icing sugar
- 200 g butter
- 2 pcs Yolks
- 1 teaspoon Vanilla extract
- pinch of salt

Directions
In a bowl, mix flour with powdered sugar and a pinch of salt. Tip: try to have all the ingredients at room temperature, this will make the dough more elastic and easier to knead.
Add the chopped butter and egg yolks to the dry mixture, followed by vanilla extract. Knead the dough into a smooth mass. My tip: don't knead the dough for too long to avoid it hardening too much.
Form a ball from the dough, wrap it in cling film and put it in the refrigerator for about 30 minutes. Such a cool break will allow the dough to set properly and make it easier to roll out.
After this time, roll out the dough to a thickness of about 1 cm and punch out any shapes.
Place the cut out cookies on a baking tray lined with baking paper. Tip: remember to leave adequate gaps between the cookies, as they may expand a bit during baking.
Bake the cookies in a preheated to 180 degrees Celsius oven for about 10-12 minutes, until they begin to gently brown on the edges.
Cool the finished cookies and then sprinkle with powdered sugar. Enjoy your meal!
