Creamy Vegetarian Carbonara

Ingredients
- 1 lb spaghetti
- 2 tbls olive oil
- 1 onion
- 4 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 Cup heavy cream
- 1⁄2 Cup parmesan
- 4 egg yolks
- salt and pepper to taste
- Chopped fresh parsley, for garnish

Cook the spaghetti according to package instructions. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the sliced mushrooms and continue to cook until they are browned and tender, about 8 minutes.
In a bowl, whisk together the heavy cream, Parmesan cheese, and egg yolks until well combined.
Add the cream mixture to the skillet with the mushrooms and onion. Bring to a simmer and cook until the sauce thickens, about 5 minutes.
Add the cooked spaghetti to the skillet and toss to coat with the sauce. Season with salt and pepper
Serve carbonara, garnished with chopped parsley.
