Creamy soup with purple potatoes
The creamy purple potato soup is the ideal choice for all gourmet souls who are looking for something different and original. Purple potatoes add an interesting colour and delicious taste to the soup.
Ingredients
- 500 g purple potatoes
- 1 pcs onion
- 3 cloves garlic
- 1 l vegetable broth
- 200 ml cooking cream
- 2 spoons butter
- Salt and black pepper
- Chopped parsley for garnish

Directions
Peel the purple potatoes and cut into smaller cubes. Finely chop the onion and garlic cloves.
Melt the butter in a frying pan, add the chopped onion and garlic and fry them until golden brown.
Add the chopped purple potatoes to the sautéed vegetables and sauté everything together for a few more minutes.
Then add the vegetable broth, season with salt and pepper and let everything simmer together until the potatoes are soft.
When the potatoes are soft, blend the soup with a blender until smooth.
At the end, add the cooking cream to the soup, stir it and let it simmer for a while.
Before serving, garnish the soup with chopped parsley.
Serve this delicious creamy soup with purple potatoes with toasted bread pieces.
