Creamy Ginger Carrot Soup
A creamy, slightly spicy soup full of vitamins that warms up on cold days. The ginger gives the soup a unique hot flavor.
Ingredients
- 500 g carrot
- 1 pcs onion
- 2 cloves garlic
- 1 A piece of ginger
- 1 l vegetable broth
- 150 ml cooking cream
- 1 pinch salt
- 1 pinch ground black pepper

Peel and finely chop the carrot, onion, garlic, and ginger.
In a pan with a little oil, fry the onion until golden, add garlic, ginger and carrot and sauté for a few minutes until the carrot softens slightly.
Transfer the vegetables into the pot, cover with broth and let it cook for about 20 minutes, until the carrot is completely soft.
Blend the soup until creamy, add the cream, salt, and pepper, and let it simmer for a moment on moderate heat.
Season the soup to taste before serving. Serve with fresh bread.
