- 1 Cup sugar
- 1 teaspoon salt

First, break the coconuts open.
Remove the coconut water and set it aside for later use. Scoop out the coconut meat.
Shred or grate the coconut meat.
In a medium saucepan, combine the shredded coconut meat, sugar, and salt.
Cook over medium heat, stirring constantly, until the sugar has completely dissolved and the mixture is well combined.
Lower the heat and simmer for about 10-15 minutes, or until the coconut mixture thickens and becomes creamy.
Use your homemade cream of coconut in desserts, tropical drinks, or as a topping for ice cream, cakes, or fruit salads.
