I love preparing these cottage cheese pancakes for my child's breakfast. They are unbelievably easy to prepare, and their taste is no less delicious. In fact, I always make sure that they are properly fluffy and light.

Combine all ingredients together in a bowl. In my experience, using a hand mixer makes the batter smooth and well combined. Remember to add baking powder, which makes the pancakes fluffier. If the batter is too thick, you can add a little milk.

Then, heat the oil in the pan. Remember not to overheat the oil. One large spoonful of batter is the ideal amount for one pancake. Fry the pancakes over medium heat until golden on both sides. I would avoid turning the pancakes too early, as they may fall apart. Finally, serve the pancakes with any toppings you like.
