Cold cheesecake with mascarpone and strawberries is the perfect dessert for summer. No baking, simple to prepare, and the strawberries give it a unique fruity flavor. Thanks to the use of mascarpone cheese, the cheesecake is delicate and creamy in taste.
Ingredients
- 230 g Cookies
- 100 g butter
- 500 g mascarpone cheese
- 1 glass Icing sugar
- 1 lemon
- 1 teaspoon Vanilla extract
- 2 teaspoons Gelatines
- 4 spoons boiling water
- 300 g fresh strawberries

Grind the cookies into small pieces (you can use a blender). Melt the butter and mix with the ground cookies.
Thus prepared mass will be our bottom for the cheesecake. Put it on the bottom of the cake pan and knead it thoroughly.
Dissolve the gelatin in boiling water and set aside to cool. Meanwhile, mix mascarpone with powdered sugar. Add the grated lemon zest and vanilla extract.
Add cooled gelatin to the cheese mixture, mix the whole thing thoroughly, and then pour it on the cookie bottom.
Wash the strawberries, cut them in half and arrange them on top of the cheesecake.
Put the cheesecake in the refrigerator for a minimum of 4 hours, but preferably overnight. Before serving, you can decorate with additional strawberries.
