Classic Tofu and Spinach Stuffed Pasta Shells
This hearty and healthful pasta dish features nutritious spinach and tofu stuffed into shells for a delicious, vegan-friendly meal. It's a large, flavorful dish that is perfect for a family dinner or a friendly gathering.
Ingredients
- 24 jumbo pasta shells
- 2 tbls olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 Block tofu, drained and crumbled
- 2 cups fresh spinach, chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- salt and pepper to taste
- 1 container marinara sauce
- Fresh basil for garnish

Directions
Preheat oven to 350°F (175°C).
Cook pasta shells according to package instructions until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté until onions are translucent.
Add crumbled tofu, spinach, basil, oregano, salt, and pepper to the skillet. Sauté for 5 to 7 minutes until spinach is wilted and ingredients are well-combined.
Pour half of the marinara sauce into the bottom of a baking dish.
Stuff each pasta shell with the tofu and spinach mixture and place them in the baking dish.
Pour the remaining marinara sauce over the shells.
Cover the baking dish with foil and bake for 20 minutes.
Uncover and bake for additional 10 minutes or until the sauce is bubbling.
Serve hot, garnished with fresh basil.
