Classic Rolled Oats Date Slice Recipe
This lusciously sweet and chewy date slice is perfect for an after-dinner treat or a midday snack. The soft, buttery base is topped with a layer of naturally sweet dates and a crunchy oat crumble topping, making for a treat the whole family will adore. The slices are loaded with flavor, provide great sustenance, and have the added health benefit of being packed with dietary fiber.
Ingredients
- 250 g pitted dates
- 1 teaspoon bicarbonate of soda
- 150 g butter
- 250 g self-raising flour
- 160 g brown sugar
- 85 g rolled oats
- 1 egg

Directions
Preheat the oven to 180°C/160°C fan/gas 4 and line a 20cm square tin with baking paper.
Cut the dates into small pieces and put them in a saucepan with 250ml of water. Bring to the boil, then remove from the heat and stir in the bicarbonate of soda. Set aside to cool.
Melt the butter in a large saucepan. Remove from the heat and stir in the flour, sugar, and oats.
Reserve 1 cup of this mixture for the topping. To the remainder, add the egg and mix well.
Press the mixture into the base of the tin, then spread the date mixture over the top. Sprinkle the reserved topping over the dates.
Bake for 30-35 minutes or until golden brown. Allow to cool before cutting into slices and serving.
