Ingredients
For the crust:
- 1 Cup all-purpose flour
- 1⁄2 Cup powdered sugar
- 1⁄2 Cup unsalted butter, cold and cubed
- pinch of salt
For the filling:
- 1⁄2 cups crystal sugar
- 1⁄4 Cup all-purpose flour
- 4 large eggs
- 0.6 Cup fresh lemon juice
- Zest of one lemon
- Powdered sugar, for dusting

Preheat oven to 180°C. Line an 8x8-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal.
In a mixing bowl, whisk together the flour, powdered sugar, and salt for the crust. Add in the cold butter cubes, and using a pastry cutter or your fingers cut into the dry ingredients until the mixture resembles coarse crumbs.
Press the crust mixture evenly into the bottom of the prepared baking dish using the back of a spoon or your hands. Bake for 15-20 minutes, or until lightly golden.
While the crust bakes, prepare the filling. In a separate bowl, whisk together the granulated sugar and flour. Add in the eggs, lemon juice, and lemon zest. Whisk until well combined and smooth.
Once the crust is slightly cooled, pour filling over the crust, spreading it out evenly. Return the baking dish to the oven and bake for an additional 25-30 minutes, or until the filling is set and slightly firm to the touch.
Remove the lemon bars from the oven and let them cool completely in the baking dish. Once cooled, refrigerate to allow the bars to set. Cut into squares or rectangles.
Serve lemon bars dusted with powdered sugar. Store any leftovers in an airtight container in the refrigerator.
