Christmas cake with cinnamon
Recipe for a simple Christmas cake with cinnamon and fruit.
Ingredients
- 250 g Plain flour
- 170 g butter
- 100 g powdered sugar
- 3 a piece Eggs
- 1 teaspoon baking powder
- pinch of salt
- 2 spoons ground cinnamon
- Juice and grated lemon rind
- 200 g Mixed fruit

Directions
Mix the flour, butter, sugar, eggs, baking powder and salt thoroughly. I usually do this in a food processor, but it can also be done by hand.
The dough should be soft and smooth, not sticky. If it is too stiff, add a little milk. If it is too runny, a little flour.
Let the dough rest in a cool place for about an hour.
Then add the cinnamon, lemon zest and juice. You can also use orange juice and zest for a different flavor variation.
Finally, stir in the chopped fruit. But beware, not all fruit has the same consistency and can make the dough moist, so I take this into account when choosing and preparing it.
Transfer the dough to a greased and floured baking tin.
Bake at 180°C for about 35-45 minutes, but test with a skewer to see if the cake is cooked.
