- 650 g Chicken carcasses
- 1700 water
- 150 g celery
- 1 parsley
- 100 g kohlrabi
- 1 onion
- 1 carrot
- 50 g fennel
- 1 tomato
- 4 mushrooms

1. Step
Put the carcasses, spices, and water into the pot and bring to a boil. Lower the heat and add salt.
2. Step
We clean all the vegetables and apart from tomatoes, potatoes, and mushrooms, we add them to the broth. We cook on low heat to avoid boiling vigorously, as it could become cloudy. After three-quarters of the cooking time has passed, we add potatoes, mushrooms, and tomatoes to the soup. We cook together until tender and finally season to taste. Serve with crumbs or noodles. Garnish with chives in the bowl.
