Boiled Potatoes with Fried Mushrooms
This is a simple but delicious dish that is perfect as a side or main course. It is also an excellent vegetarian dish. The mix of earthy mushrooms and creamy potatoes is simply irresistible. This dish is easy to make and requires very few ingredients.
Ingredients
- 1 kg boiled potatoes in skins
- 500 Gram Fresh mushrooms (e.g. champignons, chanterelles)
- 3 Tablespoon olive oil
- 2 Cloves garlic
- 1 Piece Fresh parsley
- 1 Pinch salt
- 1 Pinch pepper

Directions
Bring the peeled potatoes to a boil in a large pot with plenty of water. Allow to cook on medium heat for 20-25 minutes until they are done. Drain and set aside.
In the meantime, clean the mushrooms and cut them into slices or pieces, depending on preference.
Heat the olive oil in a large pan. Chop the garlic and fry it in the olive oil until it's fragrant.
Add the mushrooms and sauté over medium heat until they are golden brown and soft. Season with salt and pepper.
Chop the parsley and sprinkle it over the mushrooms. Mix everything well.
Finally, serve the boiled potatoes with the fried mushrooms. Sprinkle some fresh parsley on top if you like. Enjoy your meal!
