Crush the digestive biscuits into fine crumbs. You can do this by putting them in a plastic bag and rolling with a rolling pin or using a food processor.

2. Step

Mix the crushed biscuits and melted butter in a bowl until well combined.

3. Step

Press the mixture into the base of a rectangular baking tin lined with parchment paper. Place this in the refrigerator to set for about 15 minutes.

4. Step

Meanwhile, melt the white chocolate in a heatproof bowl over a pot of simmering water. Once melted, remove from the heat.

Stir in the peppermint extract, green food coloring (if using), and condensed milk until well combined.

Pour this mixture over the set biscuit base and return to the refrigerator to set for 1 hour.

Once the peppermint layer has set, melt the dark chocolate in the same heatproof bowl over the pot of simmering water.

Pour the melted dark chocolate over the peppermint layer and smooth with a spatula.
