Best Matcha Green Tea Ice Cream

- 2 cups of heavy cream
- 1 Cup of whole milk
- 3⁄4 Cup of granulated sugar
- 2 tbls of high-quality Matcha green tea powder
- 6 large egg yolks

Directions
In a medium-sized saucepan over medium heat, combine the heavy cream, whole milk and half of the sugar. Stir the mixture until it begins to steam but not yet boiling.
In a separate mixing bowl, whisk together the egg yolks, Matcha powder and the remaining half of the sugar. Continue until you achieve a smooth and incorporated mixture.
Gradually pour the heated cream mixture into the egg mixture, while continuously whisking to prevent the eggs from cooking.
Once combined, return the mixture back to the saucepan and heat over low-medium flame, constantly stirring until it thickens into a custard-like consistency.
Strain the mixture through a fine mesh sieve into a large bowl. Set the bowl over an ice water bath and stir until the mixture cools down.
Cover the bowl with plastic wrap and refrigerate for at least 2 hours or until completely chilled.
Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer's instructions.
Transfer the churned ice cream into an airtight storage container, then cover and freeze until firm or desired consistency is achieved.
Serve the Matcha ice cream in your favorite dessert bowls or cones and enjoy!
