Directions
Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners and set aside.
In a mixing bowl, combine the flour, baking soda, and salt. Whisk gently until well combined.
Add the softened butter to the dry ingredients and mix on low speed until the mixture resembles coarse crumbs.
In another bowl, beat the eggs lightly. Then, add the milk and vanilla extract. Whisk until well blended.
Gradually pour the wet ingredients into the dry, mixing at low speed until just combined. Be careful not to overmix.
Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
Remove the cupcakes from the oven and let them cool in the pan for 5 minutes. Then, transfer them to a wire rack to cool completely.
Once the cupcakes have cooled, frost them generously with cream cheese frosting.
For an extra touch, decorate with sprinkles, chopped nuts, or edible flowers.
