Basic Homemade Grandma's Chicken Soup
Warm chicken soup is perfect for winter evenings or when you're feeling under the weather. Packed with tender chicken, vegetables, and aromatic herbs, this soup provides nourishment and soothing flavors that will leave you feeling satisfied and content.
Ingredients
- 11⁄2 lbs boneless, skinless chicken breasts cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 Stems celery, sliced
- 6 cups chicken broth
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and black pepper, to taste
- 2 cups egg noodles or preferred pasta
- Fresh parsley, chopped for garnish

Directions
Heat the olive oil and saute garlic and onion. Add chicken and cook until browned. Then remove the chicken and set aside.
To the pot, add the carrots and celery. Saute for few minutes until slightly softened.
Return the browned chicken to the pot and pour chicken broth. Add the bay and dried thyme. Season with salt and black pepper to your taste. Bring to a boil.
Once the soup is boiling, set the heat to low and cover the pot. Let it simmer for about 20 minutes to allow the flavors to meld together.
In the meantime, cook the egg noodles in a separate pot according to the instructions. Set aside.
After 20 minutes, remove the bay leaf from the soup and add in cooked noodles. Serve and enjoy!
