Basic Homemade Grandma's Chicken Soup

  • 1 medium onion, diced Added to
  • 3 cloves garlic, minced Added to
  • 2 carrots, sliced Added to
  • 2 Stems celery, sliced Added to
  • 6 cups chicken broth Added to
  • 1 bay leaf Added to
  • 1 teaspoon dried thyme Added to
  • Salt and black pepper, to taste Added to
  • 2 cups egg noodles or preferred pasta Added to
  • Fresh parsley, chopped for garnish Added to

1. Step

Heat the olive oil and saute garlic and onion. Add chicken and cook until browned. Then remove the chicken and set aside.

2. Step

To the pot, add the carrots and celery. Saute for few minutes until slightly softened.

3. Step

Return the browned chicken to the pot and pour chicken broth. Add the bay and dried thyme. Season with salt and black pepper to your taste. Bring to a boil.

4. Step

Once the soup is boiling, set the heat to low and cover the pot. Let it simmer for about 20 minutes to allow the flavors to meld together.

5. Step

In the meantime, cook the egg noodles in a separate pot according to the instructions. Set aside.

6. Step

After 20 minutes, remove the bay leaf from the soup and add in cooked noodles. Serve and enjoy!
