Banana cake without eggs

It's a quick and easy recipe that I've adapted for family gatherings. The bananas add a subtle sweetness to the cake and I make it regularly because my family loves it.

  • 75 ml olive oil Added to

  • 1 teaspoon Tea Soda Bicarbs Added to
  • 1 teaspoon baking powder Added to

  • 50 g Nuts (optional) Added to

1. Step

Start by preheating the oven to 180 °C and greasing a baking tray.

2. Step

Mash the ripe bananas with a fork. Add brown sugar, olive oil and mix well.

3. Step

Sift the flour, baking soda, baking powder and a pinch of salt into another bowl. Then pour all the ingredients into the banana mixture, add the vanilla extract and stir. If you like nuts, you can chop them up and add them to the batter, which will give it a subtle crunch.

4. Step

Pour the batter into the prepared baking pan and bake for about 40 minutes, or until the top is firm and golden. Place the banana slices on top.

Once out of the oven, let the cake cool for at least 15 minutes before removing it from the tin. And then you can just serve!
