1. Step

Preheat the oven to 180 °C. Wash and dry the cod fillets thoroughly. Rinse and chop the tomatoes. Peel and crush the garlic cloves.

2. Step

In a large roasting pan, spread olive oil. Add the cod fillets and sprinkle with salt and freshly ground black pepper. Place tomato slices on top of each fillet and sprinkle with garlic.

3. Step

Bake for 15 - 20 minutes, or until the fish is firm and white.

4. Step

Before serving, sprinkle the fillets with fresh basil or parsley.
