Authentic Tofu Pad Thai Stir Fry
Tofu Pad Thai is a classic Thai dish veganized by substituting shrimp or chicken usually found in Pad Thai with tofu. It is a balanced combination of sweet, spicy and sour flavors tossed with rice noodles, tofu and a mix of vegetables, all garnished with crushed peanuts and a lime wedge. It's a healthy and delicious meal that is easy to make and affordable.
Ingredients
- 200 g rice noodles
- 200 g tofu
- 2 finely chopped garlic cloves
- 1 finely chopped red chilli
- 100 g bean sprouts
- 2 chopped green onions
- 2 Eggs (vegan version: use scrambled tofu or chickpea flour
- 2 tbls of oil
- 2 tbls of sugar
- 3 tbls of Fish sauce (vegan version: use soy sauce or tamari)
- 11⁄2 tbls of Tamarind Paste
- 1 lime
- 50 g Crushed peanuts
- handful of fresh cilantro

Directions
Soak the rice noodles in warm water as per the instructions on the packet.
While the noodles are soaking, fry tofu in a pan with a tablespoon of oil until it is golden and crispy. Set aside.
Heat the remaining oil in a wok or large frying pan. Sauté garlic and chilli.
Add the eggs and scramble them quickly. (Or add your vegan alternative)
Drain the soaking (now softened) noodles and add to your pan. Fry for a minute.
Stir in the sugar, fish sauce (or vegan alternatives), and tamarind paste. Mix well until noodles are well coated.
Add tofu, bean sprouts, and green onions. Stir fry for another 2-3 minutes.
Serve hot, each serving garnished with crushed peanuts, a wedge of lime and a sprinkle of fresh cilantro.
