How to make easy Vietnamese beef and noodle soup!
Ingredients
- 2 kg beef bones
- 500 g boneless beef
- 3 onions
- 1 tablespoon salt
- 1 tablespoon sugar
- 10 cm ginger
- 3 star anise
- 2 sticks cinnamon
- 3 cardamom
- 1 teaspoon cloves
- 1 teaspoon Coriander Seeds
- 450 g rice noodles flat
- 30 g green onion
- 300 g bean sprouts

Directions
Put the bones in water, bring to a boil and cook for 5 minutes. Then drain. Put in water again along with the boneless meat, bring to a boil, and let simmer for 1 hour.
In a heated pan, put the halved ginger and 2 halved onions cut-side down. Add star anise, cinnamon, and cardamom. Fry till browned. Add to the broth. Add cloves, coriander, salt, and sugar to the broth as well. Cook for an hour.

Cut 1 onion into thin sticks. Remove the meat from the broth and cut into slices. Cook the rice noodles. Put the bean sprouts in hot water for 30 seconds, then drain.
Put the noodles in your serving bowl, add meat strips, onion sticks, chopped green onion, and hot broth. Garnish with basil and sauces of choice, and enjoy!
