- 1⁄2 Cup Coriander Seeds
- 1⁄4 Cup cumin seeds
- 2 Fennel Seeds
- 2 black peppercorns
- 1 tablespoon black cardamom seeds
- 1 tablespoon green cardamom seeds
- 2 cinnamon sticks
- 1 teaspoon cloves
- 1 teaspoon nutmeg
- 2 dried bay leaves
- 1 tablespoon dried red chili flakes

1. Step
Toast coriander seeds, cumin seeds, fennel seeds, black peppercorns, black cardamom seeds, green cardamom seeds, cinnamon sticks, cloves, and bay leaves in a dry skillet over medium heat fragrant, about 5 minutes.

Remove and let cool completely.

Using a spice grinder, grind the spices into a fine powder.

Add nutmeg and chili flakes and stir to combine.
