1. Step

Heat a dry pan on medium heat and add hazelnuts. Toast them until lightly golden and fragrant, occasionally stirring to ensure toasting. Remove from heat and let cool.

In the same pan, add the sesame seeds and toast them until they turn golden and start to pop. Stir constantly, then remove from heat and cool.

On a small pan, toast the coriander seeds, cumin seeds, and black peppercorns.

Using a mortar and pestle grind the hazelnuts. Transfer to a bowl.
