1. Step

Heat one tablespoon of vegetable oil in a skillet or wok over medium-high heat.

2. Step

Add the eggs to the skillet and scramble until they are fully cooked. Remove the scrambled eggs from the skillet and set aside.

3. Step

In the same skillet, add the remaining tablespoon of vegetable oil and sauté the garlic for about a minute, or until fragrant.

4. Step

Add chicken, shrimp, peas, carrots, and bell peppers to the skillet. Stir-fry the ingredients for about 3-4 minutes until they are slightly tender.

Push the ingredients to one side of the skillet and pour the sesame oil in. Quickly add the cold rice on top of the sesame oil and break clumps with a spatula.

Drizzle the soy sauce over the rice and toss together until coated and heated through.

Add the scrambled eggs back into the skillet and mix with the rice and vegetables.

Season with salt and pepper to taste. Stir-fry for an additional minute to ensure all ingredients are combined evenly.
