Asparagus soup with cream
Tasty asparagus soup with cream, which you can cook in an hour.
Ingredients
- 500 g asparagus
- 1 pcs onion
- 2 cloves garlic
- 50 g butter
- 1 l vegetable broth
- Salt, freshly ground black pepper
- 250 ml cooking cream
- nutmeg

Clean the asparagus and cut into smaller pieces. Peel and finely chop the onion and garlic. Remember that when slicing the onion, try not to cut the root part of the onion so that it does not break into pieces.
Melt the butter in a frying pan, add the onion and garlic and fry until golden.
Add the asparagus and simmer for a while. From my experience I can tell you that stewing the asparagus makes this soup taste even better.
Pour the broth over it, season with salt and pepper and cook for about 20 minutes.
Blend the soup, add the cream, add nutmeg to taste and let it simmer for a while.
Before serving, garnish the soup with a piece of cooked asparagus.
