Apple pie with mascarpone
This apple pie with mascarpone is one of my favorites and I make it often in the fall season when apples are at their best.
Ingredients
- 4 a piece Large apples
- 500 g mascarpone
- 1 bal vanilla sugar
- 2 a piece Eggs
- 150 g confectionery sugar
- 150 g flour
- 1 bal baking powder
- pinch of salt
- lemon juice

Directions
Preheat the oven to 180 degrees.
Peel, clean and finely grate the apples. Slice some of the apples into mesquite shapes and set aside. Pour the lemon juice over the apples to prevent them from browning and stir until fully mixed.
In a bowl, whisk together the mascarpone, eggs, sugar, vanilla sugar and a pinch of salt. Then add the flour mixed with baking powder. Finally, add the grated apples and mix well.
Pour the batter into a greased and floured baking tin and place the apple slices on top.
Bake the apple cake with mascarpone for approximately 45 minutes. When the time is up, leave the cake in the oven for another 10 minutes and then take it out and sprinkle it with sugar once it has cooled.
