PHOTO RECIPE Amazing Cottage Cheese Cake for Coffee
Grated cocoa dough with cottage cheese and cherries.
Ingredients
BASKET
- 200 g Smooth spelt wholemeal flour
- 1 ts vanilla sugar
- 4 tablespoon confectionery sugar
- 1⁄2 powder To the pastry
- 2 tablespoon cocoa
- 1⁄2 Yolks
- 125 g softened butter
CHERRY MIX
- 1 cherry jam
- 200 g Frozen cherries
- 2 tablespoon sugar
- 1 tablespoon starch
COATING LAYER
- 200 g Ricotta
- 200 g Curdled curd cheese or smooth
- 3 tablespoon Powdered sugar honey
- 1 ts Vanilla sugar to taste
- 1⁄2 packaging vanilla pudding
- 1⁄2 Yolks
- 1 pcs Egg white
- a little bit Lemon zest

Directions
DOUGH: Mix dry and wet ingredients separately. Then, with hands, form a dough ball, wrap it in foil and place it in the freezer for at least 1 hour.
After an hour, we grate half of the journey onto a greased baking tray and gently pat it down with our hands. We bake at 180°C/5 min. We spread jam on the hot crust.
CHERRY MIX: We can use cherry compote or let frozen cherries melt, add sugar and thicken with starch dissolved in a little water. Stir until thickened. Let the finished mixture cool slightly and then spread it on the dough smeared with jam.
MERINGUE LAYER: Whip the egg white. Mix the remaining ingredients together and then add the whipped egg white to them. Apply this on the cherry mixture.
On top, grate the second half of the dough and bake. 180°C/about 35 min. After baking, let the cake completely cool down and store it in a sealable box in the refrigerator so that it remains soft.
