Activated Buckwheat, Berry and Yoghurt Parfait

  • 1 Cup of raw buckwheat groats Added to
  • 1 Cup of water for soaking Added to
  • 1 Cup of low-fat Greek yogurt Added to
  • 2 tbls of raw honey Added to
  • 1 Cup of mixed berries (strawberries, raspberries and blueberries are my favorites) Added to
  • 2 tbls of chopped nuts (optional for topping) Added to

1. Step

The process begins the night before by soaking the buckwheat in water and leaving it overnight. This step is known as \activating\ and aids in digestion while enhancing nutrient absorption.

2. Step

The next morning, rinse the buckwheat thoroughly with water until it runs clear, this removes any excess starch.

3. Step

In two serving glasses, begin layering your parfait. Start with a layer of Greek yoghurt at the bottom. Apply a generous spoon of honey to the yogurt layer - remember, the yogurt can be quite tart, and honey will balance it out with its sweetness.

4. Step

Add a layer of activated buckwheat over the yogurt layer, using half the buckwheat for each glass. Rest assured, this will lend a wonderful crunchy texture to the parfait.

5. Step

Next, comes the layer of fresh mixed berries. Over the years, I've found that a combination of ripe strawberries, raspberries, and blueberries bring a vibrant freshness and tanginess to the parfait.

6. Step

Repeat the layering sequence if the glasses are large enough. If they are smaller, simply top off with another dollop of yogurt, a drizzle of honey and the remaining buckwheat.

7. Step

Add chopped nuts on top if you'd like. Personally, I love some toasted almonds for an additional crunch!

8. Step

Serve immediately or refrigerate until needed. Enjoy it as a meal on its own or a healthy snack.
